
Ginger Scallion Chicken Noodles

Instructions

Slice chicken breast thinly against the grain. Toss with cornstarch, salt, and pepper.

Cook egg noodles according to package directions. Drain and set aside.

Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add chicken and stir-fry until cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

Add the remaining 1 tbsp vegetable oil to the skillet. Add minced ginger and minced garlic. Stir-fry for 30 seconds until fragrant.

Stir in soy sauce, sesame oil, rice vinegar, and water. Bring to a simmer.

Return the cooked chicken to the skillet. Add the cooked noodles and most of the chopped scallions (reserve some for garnish). Toss to combine and heat through, about 2-3 minutes.
