Instructions
In a large bowl, whisk together 1.5 cups amaranth flour, 2 tsp baking powder, 0.5 tsp salt, and 2 tbsp sugar.
In a separate bowl, whisk together 1 whole egg, 1.25 cups milk, and 3 tbsp melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Heat a lightly oiled griddle or frying pan over medium-high heat.
Pour or scoop 0.25 cup of batter onto the griddle for each pancake. Cook for about 2 minutes per side, or until golden brown.
