
Rustic Italian Sausage and White Bean Soup

Finely chop the onion, carrots into 0.5 cm (0.2 inch) pieces, and celery stalks into 0.5 cm (0.2 inch) pieces. Mince the garlic. Drain and rinse the cannellini beans.

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Remove the sausage from the pot and set aside, leaving the drippings.

Add the chopped onion, carrots, and celery to the pot and cook until softened, about 8-10 minutes. Add the minced garlic, dried basil, and dried oregano, and cook for 1 minute more until fragrant.

Stir in the diced tomatoes (undrained) and vegetable broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot. Return the cooked Italian sausage to the pot.
