In a large bowl, combine ground turkey, egg, breadcrumbs, garlic powder, salt, and black pepper. Mix gently until just combined. Roll the mixture into 1-inch meatballs.

Heat olive oil in a large skillet over medium-high heat. Add meatballs and cook, turning occasionally, until browned on all sides, about 5-7 minutes. Remove meatballs from skillet and set aside.

In a small bowl, whisk together honey, soy sauce, rice vinegar, and minced garlic. In a separate small bowl, whisk together cornstarch and water to create a slurry.

Pour the honey garlic mixture into the skillet. Bring to a simmer, then stir in the cornstarch slurry. Cook, stirring, until the sauce thickens, about 1-2 minutes.
