
Grilled Hawaiian Teriyaki Chicken Skewers
Tender chicken pieces marinated in a homemade teriyaki sauce and grilled on skewers for a fun and flavorful meal. Perfect for a luau or summer barbecue.

Prepare the teriyaki sauce: In a medium saucepan, whisk together soy sauce, brown sugar, pineapple juice, sesame oil, minced garlic (about 1 tbsp), and grated ginger (about 1 tsp).

In a small bowl, whisk together cornstarch and 2 tbsp water to create a slurry. Add this slurry to the saucepan with the teriyaki sauce.

Cook the sauce over medium heat, stirring constantly, until it thickens, about 5-7 minutes. Remove from heat and let it cool slightly.

Cut the chicken breast into 2.5 cm (1 inch) cubes. Place the chicken cubes in a large bowl or a zip-top bag.

Pour about half of the teriyaki sauce over the chicken cubes, ensuring they are well coated. Marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator. Reserve the remaining sauce for serving.

Soak wooden skewers in water for at least 30 minutes to prevent burning. Thread the marinated chicken cubes onto the skewers.

Preheat your grill to medium-high heat (approximately 400°F/200°C).

Grill the chicken skewers for 4-6 minutes per side, or until the chicken is cooked through and has nice grill marks. Brush with reserved teriyaki sauce during the last few minutes of grilling.
