1.5 lbs chicken breast
1 lbs green beans
13.5 oz coconut milk
1 medium yellow onion
3 cloves garlic
1 inch ginger
2 tbsp red curry paste
2 tbsp vegetable oil
1 tsp salt
1 tsp sugar
2 tbsp lime juice
0.25 cup cilantro

Instructions

    Cut chicken breasts into bite-sized pieces. Trim and halve green beans. Finely chop the yellow onion, mince the garlic, and grate the ginger.

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chopped onion and cook until softened, about 5 minutes.

    Add the minced garlic and grated ginger to the skillet and cook until fragrant, about 1 minute.
