1 cup ricotta cheese
1 large lemon
3 cloves garlic
2 tbsp olive oil
0.5 cup parmesan cheese
0.25 cup fresh parsley
1 tsp salt
0.5 tsp black pepper

Preheat oven to 375°F. Season chicken breasts with salt and pepper.

In a bowl, combine ricotta cheese, grated lemon zest, minced garlic, 1 tbsp olive oil, and half of the parmesan cheese. Stir in chopped parsley.

Place seasoned chicken breasts in a baking dish. Spoon the ricotta mixture evenly over each chicken breast.

Bake for 25-30 minutes, or until chicken is cooked through and the topping is lightly golden.
