
Thai Sweet Chili Chicken Lettuce Wraps

Separate lettuce leaves and wash thoroughly. Set aside.

Chop water chestnuts and baby corn. Slice scallions thinly, separating white and green parts. Mince garlic and grate ginger.

In a small bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, 0.25 tsp salt, and 0.125 tsp black pepper.

Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add ground chicken and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain excess fat.

Add the white parts of the scallions, garlic, and ginger to the skillet. Stir-fry for 1 minute until fragrant.

Add chopped water chestnuts and baby corn. Stir-fry for another 2 minutes.

Pour the sauce mixture into the skillet. Stir well to combine and cook for 1-2 minutes until the sauce thickens and coats the chicken mixture. Stir in the green parts of the scallions and 0.25 tsp salt.
