
Classic Irish Bacon and Cabbage

Place the bacon in a large pot and cover with water. Bring to a boil over medium-high heat.

Reduce heat to medium-low and simmer for 45 minutes, or until the bacon is tender.

While the bacon is simmering, peel and chop the potatoes. Place them in a separate pot and cover with cold water. Add 1 tsp of salt. Bring to a boil over medium-high heat and cook for 15-20 minutes, or until tender.

Drain the potatoes and mash them with milk, 2 tbsp of butter, 0.5 tsp salt, and 0.5 tsp black pepper until smooth and creamy.

Core and roughly chop the cabbage. Add it to the pot with the bacon during the last 15 minutes of its cooking time. Cook until tender.

Remove the bacon and cabbage from the pot. Slice the bacon.

Serve the sliced bacon and cooked cabbage with the mashed potatoes. Season with remaining salt and pepper to taste.
