
Crispy Parmesan Polenta Fries
Golden and crispy polenta fries infused with parmesan cheese, baked until tender inside and crunchy outside.

Bring water to a boil in a large saucepan. Gradually whisk in polenta and 1 tsp salt.

Reduce heat to low and cook, whisking frequently, until polenta is thick and smooth, about 5-7 minutes.

Remove from heat. Stir in grated parmesan cheese and black pepper.

Pour the polenta mixture into a greased 9x13 inch baking dish. Spread evenly. Let it cool completely, then refrigerate for at least 30 minutes until firm.

Preheat oven to 400°F. Line a baking sheet with parchment paper and lightly brush with olive oil.

Cut the chilled polenta into fry shapes (about 1/2 inch thick).

Arrange polenta fries in a single layer on the prepared baking sheet. Brush or drizzle with the remaining olive oil and sprinkle with the remaining 0.5 tsp salt.
