14 oz firm tofu
3 tbsp sesame oil
0.25 cup cornstarch
0.25 cup soy sauce
2 tbsp rice vinegar
1 tsp sriracha
0.5 tbsp fresh ginger
1 clove garlic
4 cups cooked rice
1 cup cucumber, diced
1 cup avocado, diced
1 cup edamame, shelled
1 tbsp shredded nori
1 tbsp sesame seeds
1 tsp salt
0.5 tsp black pepper

Instructions

    Press tofu to remove excess water. Cut into 1-inch cubes. Toss with cornstarch until evenly coated.

    In a small bowl, whisk together soy sauce, rice vinegar, sriracha, minced ginger, minced garlic, and 1 tbsp of sesame oil.

    Heat remaining 2 tbsp sesame oil in a large skillet over medium-high heat. Add tofu in a single layer and cook for 5-7 minutes per side, until golden brown and crispy.

    In a separate bowl, gently toss the crispy tofu with half of the prepared dressing.

    Divide cooked rice among four bowls.

    Artfully arrange the dressed tofu, diced cucumber, diced avocado, and shelled edamame over the rice.

    Drizzle the remaining dressing over the bowls. Garnish with shredded nori and sesame seeds. Season with salt and pepper to taste.
