
Creamy Roasted Red Pepper Tortellini

Cook tortellini according to package directions. Reserve about 1/2 cup of pasta water before draining.

While tortellini cooks, heat olive oil in a large skillet over medium heat.

Mince the garlic and add it to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn.

Drain and rinse the jarred roasted red peppers. Add them to a blender or food processor.

Add heavy cream and vegetable broth to the blender with the roasted red peppers. Blend until smooth.

Pour the blended sauce into the skillet with the garlic. Bring to a simmer over medium-low heat.

Stir in grated parmesan cheese, salt, black pepper, and red pepper flakes until the cheese is melted and the sauce is well combined.

Add the drained tortellini to the skillet with the sauce. Toss to coat evenly. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
