
Creamy White Chicken Chili

Cut chicken breasts into bite-sized pieces. Season generously with salt and pepper.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.

Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.

Stir in cumin, chili powder, oregano, and cayenne pepper. Cook for 1 minute until fragrant.

Pour in chicken broth, scraping up any browned bits from the bottom of the pot. Add the diced green chilies, drained and rinsed cannellini beans, and corn.

Return the browned chicken to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for 20 minutes, or until chicken is cooked through.

Remove chicken from the pot and shred it using two forks. Return shredded chicken to the pot.

Stir in the cream cheese and lime juice until the cream cheese is melted and the chili is creamy. Taste and adjust seasoning with salt and pepper if needed.
