
Shrimp and Lime Skewers with Peanut Dipping Sauce

Peel and devein 1.5 lb (approx. 680g) of shrimp. In a bowl, combine shrimp with the juice of 1 lime, 1 tbsp (15ml) vegetable oil, 0.5 tsp salt, and 0.25 tsp black pepper. Toss to coat and let marinate for 15-20 minutes.

While shrimp marinates, prepare the peanut dipping sauce. In a small saucepan, whisk together 0.5 cup (approx. 120g) peanut butter, 3 tbsp (45ml) soy sauce, 2 tbsp (30ml) honey, 2 cloves minced garlic, 1 tbsp (approx. 15g) grated ginger, 0.5 tsp red pepper flakes, and 0.25 cup (60ml) water.

Heat the sauce over medium-low heat, stirring constantly, until it simmers and thickens slightly, about 3-5 minutes. Remove from heat and stir in 1 tbsp (15ml) vegetable oil and the juice of 1 lime.

Thread the marinated shrimp onto skewers. Discard any remaining marinade.

Preheat grill or a grill pan to medium-high heat (approx. 400F/200C). Grill shrimp skewers for 2-3 minutes per side, until pink and opaque.

Chop 0.25 cup (approx. 15g) fresh cilantro.
