
Classic Coconut Curry Mac & Cheese
A creamy and comforting mac and cheese infused with the warm spices of a classic coconut curry.

Instructions

Cook elbow macaroni according to package directions. Drain and set aside.

While macaroni cooks, finely chop the onion, mince the garlic, and grate the ginger.

In a large saucepan or Dutch oven, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.

Add the minced garlic and grated ginger to the saucepan and cook for another minute until fragrant.

Stir in the curry powder, turmeric, cumin, and cayenne pepper. Cook for 30 seconds, stirring constantly, until fragrant.

Pour in the coconut milk and bring to a simmer, scraping up any browned bits from the bottom of the pan. Reduce heat to low and let simmer for 5 minutes.

Gradually stir in the shredded cheddar cheese until melted and the sauce is smooth. Season with salt and black pepper.
