1.5 lbs chicken breast
2 tbsp olive oil
1 medium onion
1 medium bell pepper
3 cloves garlic
2 tbsp Cajun seasoning
1.5 cups corn kernels
0.5 cup chicken broth
0.25 cup heavy cream
1 tsp paprika
0.5 tsp salt
0.25 tsp black pepper

Instructions

    Dice the chicken breast into bite-sized pieces. Finely chop the onion and bell pepper. Mince the garlic.

    Heat olive oil in a large skillet over medium-high heat. Add the diced chicken and season with half of the Cajun seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

    Add the chopped onion and bell pepper to the same skillet. Cook until softened, about 5 minutes.

    Add the minced garlic and the remaining Cajun seasoning and paprika to the skillet. Cook for 1 minute until fragrant.

    Stir in the corn kernels and chicken broth. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.

    Return the cooked chicken to the skillet. Stir in the heavy cream and cook for another 2-3 minutes, or until the sauce has thickened and the chicken is heated through.
