
Creamy White Bean Crostini with Herbs

Rinse and drain the cannellini beans. Mince the garlic. Chop the fresh parsley and thyme.

In a bowl, combine the drained beans, minced garlic, 3 tbsp olive oil, lemon juice, chopped herbs, salt, and pepper. Mash with a fork until creamy but with some texture remaining.

Slice the baguette into 1/2-inch thick rounds. Brush both sides of the slices with the remaining 1 tbsp olive oil.

Place the baguette slices on a baking sheet and toast under a broiler or in a preheated oven at 400°F for 3-5 minutes per side, until golden brown.
