Ingredients

1.5 cups brown or green lentils
1 piece onion
2 piece carrots
2 piece celery stalks
3 cloves garlic
6 cups vegetable broth
14.5 oz diced tomatoes
1 piece bay leaf
0.5 tsp thyme
1 tbsp olive oil
1 tsp salt
0.5 tsp black pepper

Instructions

Rinse lentils thoroughly. Chop onion, carrots, and celery. Mince garlic.

Heat 1 tbsp of olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery. Cook until softened, about 7 minutes minutes. Add minced garlic and cook for 1 minute more minute.

Stir in the rinsed lentils, vegetable broth, diced tomatoes (undrained), bay leaf, and thyme.

Bring the soup to a boil, then reduce heat to low, cover, and simmer for 30 minutes minutes, or until lentils are tender.

Remove and discard the bay leaf. Season the soup with salt and black pepper to taste.
