Dice the onion, carrots, and celery stalks.

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the minced garlic and cook for another minute until fragrant.

Rinse the dried lentils under cold water.

Add the rinsed lentils, vegetable broth, diced tomatoes, ground cumin, dried thyme, and bay leaf to the pot.
