Prepare the chicken: Pound chicken breasts to an even thickness. Season with salt and pepper.

Heat 2 tbsp of olive oil in a skillet over medium-high heat. Cook chicken for 5-7 minutes per side, or until golden brown and cooked through. Let rest, then chop.

Prepare the salad base: Wash and chop romaine lettuce. Halve cherry tomatoes. Dice cucumber. Finely chop red onion. Dice avocado.

Make the dressing: In a small bowl, whisk together remaining 2 tbsp olive oil, lemon juice, dijon mustard, minced garlic, 0.25 tsp salt, and 0.125 tsp black pepper.
