1 head cauliflower
1 cup all-purpose flour
0.5 cup cornstarch
1 tsp salt
0.5 tsp black pepper
1 tsp paprika
1 tsp garlic powder
2 large egg
0.5 cup mayonnaise
0.25 cup sweet chili sauce
2 tbsp sriracha
1 tbsp honey
1 tbsp rice vinegar
2 stalks scallions

Instructions

    Cut cauliflower into bite-sized florets.

    In a large bowl, whisk together flour, cornstarch, salt, pepper, paprika, and garlic powder.

    In a separate bowl, whisk the eggs. Add the cauliflower florets to the egg and toss to coat.

    Add the egg-coated cauliflower to the dry ingredients and toss until evenly coated.

    Heat 2-3 inches of vegetable oil in a large pot or Dutch oven to 375°F.

    Carefully fry the cauliflower in batches for 4-6 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    While the cauliflower fries, prepare the Bang Bang sauce. In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar.

    Thinly slice the scallions.

    Once the cauliflower is fried and slightly cooled, toss it in the Bang Bang sauce until well coated.
