
Classic Kosher Brisket

Preheat oven to 325°F. Season the brisket generously on all sides with kosher salt and black pepper.

Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the brisket for 3-4 minutes per side until browned. Remove brisket and set aside.

Add chopped yellow onions, carrots, and celery to the pot. Sauté for 5-7 minutes until slightly softened. Add minced garlic and cook for 1 minute more until fragrant.

Stir in tomato paste and paprika, cook for 1 minute. Pour in beef broth and bring to a simmer.

Return the brisket to the pot, fat side up. Cover tightly with a lid or foil. Braise in the preheated oven for 3.5 to 4 hours, or until fork-tender.

Remove brisket from the pot and let it rest for 15 minutes before slicing against the grain. Skim fat from the braising liquid if desired. Serve sliced brisket with the vegetables and sauce.
