1.5 cups farro
3 tbsp olive oil
1 medium yellow onion
2 medium carrots
2 stalks celery stalks
3 cloves garlic
3 cups vegetable broth
1 leaf bay leaf
0.5 cup fresh parsley
2 tbsp lemon juice
0.5 tsp salt
0.25 tsp black pepper

Instructions

    Rinse the farro under cold water.

    Toast the rinsed farro in a large pot over medium heat with 1 tbsp of olive oil until fragrant and lightly browned, about 5 minutes.

    Dice the yellow onion, carrots, and celery stalks.

    Mince the garlic.

    Add the remaining 2 tbsp of olive oil to the pot with the toasted farro. Add the diced onion, carrots, and celery. Cook until softened, about 8-10 minutes.

    Add the minced garlic and cook for another minute until fragrant.

    Pour in the vegetable broth and add the bay leaf. Bring to a boil.

    Reduce heat to low, cover, and simmer for 20-25 minutes, or until farro is tender and liquid is absorbed.

    Remove the pot from heat. Discard the bay leaf.

    Chop the fresh parsley.

    Stir in the chopped parsley, lemon juice, salt, and black pepper.
