28 oz canned whole peeled tomatoes
3 cup vegetable broth
1 small red onion
3 cloves garlic
2 tbsp olive oil
4 oz feta cheese
0.5 cup heavy cream
0.25 tsp cayenne pepper
1 tsp dried thyme
1 tsp salt
0.5 tsp black pepper

Instructions

    Finely chop the red onion and mince the garlic.

    Heat olive oil in a large pot over medium heat. Add the chopped red onion and sauté until translucent, about 5 minutes.

    Add the minced garlic, cayenne pepper, and dried thyme. Cook for 1 minute until fragrant.

    Add the whole peeled tomatoes (crushing them with your hands or a spoon as you add them) and vegetable broth. Bring to a simmer.

    Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally.

    Use an immersion blender to blend the soup until smooth. If using a standard blender, let cool slightly before blending in batches.

    Stir in the heavy cream and crumbled feta cheese. Heat gently over medium-low heat until the feta is mostly melted and the soup is warmed through, about 5 minutes. Do not boil.
