10 oz udon noodles
3 tbsp sesame oil
4 cloves garlic
4 tbsp soy sauce
2 tbsp rice vinegar
1 tsp sugar
0.5 tsp red pepper flakes
3 stalks scallions

Instructions

    Cook udon noodles according to package directions. Drain and rinse with cold water.

    While noodles cook, mince the garlic. Thinly slice the scallions, separating whites from greens.

    Heat 1 tbsp of sesame oil in a skillet over medium heat. Add the minced garlic and white parts of the scallions and sauté for 1-2 minutes until fragrant.

    In a small bowl, whisk together soy sauce, rice vinegar, sugar, red pepper flakes, and the remaining 2 tbsp of sesame oil.

    Add the cooked udon noodles to the skillet with the garlic and scallions. Pour the sauce over the noodles. Toss to combine and heat through for 2-3 minutes.
