
Sticky Honey Garlic Pork Meatballs

In a large bowl, combine ground pork, panko breadcrumbs, egg, 2 minced garlic cloves, and 1 teaspoon of grated ginger. Mix gently until just combined. Do not overmix.

Roll the mixture into 1-inch meatballs. You should have about 20-24 meatballs.

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add meatballs in batches and brown on all sides. Remove browned meatballs and set aside.

In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, the remaining 2 minced garlic cloves, and the remaining 1/2 teaspoon of grated ginger.

Pour the sauce into the same skillet used for the meatballs. Bring to a simmer, scraping up any browned bits from the bottom of the pan.

Return the browned meatballs to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until meatballs are cooked through and the sauce has thickened. Stir occasionally.
