1 lb chicken breast
8 oz spaghetti
0.5 cup peanut butter
0.25 cup soy sauce
2 tbsp lime juice
2 tbsp honey
1 tbsp sesame oil
2 clove garlic
1 piece ginger
0.5 tsp red pepper flakes
1 medium carrot
1 medium red bell pepper
4 stalk green onions
0.5 cup cilantro
0.25 cup water

Instructions

    Cook spaghetti according to package directions. Drain and rinse with cold water to prevent sticking. Set aside.

    While pasta cooks, dice chicken breast into bite-sized pieces. Season with salt and pepper.

    In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, minced garlic, grated ginger, red pepper flakes, and 1/4 cup water until smooth. Add more water if needed to reach desired consistency.

    Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil (if needed) and cook chicken until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

    Julienne the carrot and red bell pepper. Thinly slice the green onions and chop the cilantro.

    In a large bowl, combine the cooked spaghetti, cooked chicken, julienned carrot, red bell pepper, sliced green onions, and chopped cilantro.
