
Mussels with Tomatoes and Garlic

Prepare the mussels: scrub them under cold water and debeard any stray threads. Discard any mussels that are open and do not close when tapped.

Heat olive oil in a large pot or Dutch oven over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add the diced tomatoes and white wine to the pot. Bring to a simmer and cook for 3-5 minutes, allowing the flavors to meld.

Add the cleaned mussels to the pot. Season with salt and black pepper. Cover the pot tightly and increase the heat to medium-high.

Steam the mussels for 5-7 minutes, or until they have all opened. Shake the pot occasionally. Discard any mussels that remain closed after steaming.
