Divide the ground beef into 4 equal portions. Gently form each portion into a loose ball.

Heat a cast-iron skillet or griddle over medium-high heat. Add vegetable oil.

Place a beef ball onto the hot skillet. Immediately smash it down with a sturdy spatula or burger press to about 1/2 inch thickness. Season generously with salt and black pepper.

Sear for 2-3 minutes until a deep brown crust forms. Flip the burger, place a slice of cheddar cheese on top, and cook for another 2-3 minutes, or until the cheese is melted and the burger is cooked through.

Toast the burger buns lightly on the skillet if desired.

Assemble the burgers: spread ketchup and mayonnaise on the buns, add lettuce, tomato slices, red onion slices, pickles, and the smashed burger patty.
