2 lbs potatoes
2 medium onions
4 large eggs
0.5 cup matzah meal
0.5 cup vegetable oil
1.5 tsp salt
0.5 tsp black pepper

Instructions

    Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with some of the vegetable oil.

    Peel and coarsely grate the potatoes and onions. Place them in a cheesecloth or a clean kitchen towel and squeeze out as much liquid as possible. Discard the liquid.

    In a large bowl, whisk together the eggs, remaining vegetable oil, matzah meal, salt, and pepper.

    Add the grated potato and onion mixture to the egg mixture and stir until well combined.
