
Amaranth Patties

Cook the amaranth. In a saucepan, combine amaranth and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until broth is absorbed. Let it cool slightly.

Prepare the vegetables. Finely chop the onion, grate the carrot, dice the zucchini, and mince the garlic.

Sauté the aromatics. Heat 1 tbsp of olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the grated carrot, diced zucchini, and minced garlic, and cook for another 5-7 minutes until vegetables are tender.

Combine the patty ingredients. In a large bowl, combine the cooked amaranth, sautéed vegetables, ground cumin, ground coriander, ground paprika, cayenne pepper, chopped fresh cilantro, breadcrumbs, and the egg. Mix well until everything is thoroughly combined.

Form the patties. Divide the mixture into 8 equal portions and shape them into patties, about 1 inch thick.

Cook the patties. Heat the remaining 1 tbsp of olive oil in the same skillet over medium-high heat. Carefully place the patties in the skillet and cook for 4-5 minutes per side, until golden brown and heated through.
