0.75 cup amaranth grains
1.5 cups water
0.5 piece onion
2 cloves garlic
0.5 piece carrot
0.5 piece bell pepper
1 whole egg
0.5 cup breadcrumbs
0.5 tsp salt
0.25 tsp black pepper

Cook 0.75 cup amaranth in 1.5 cups of water according to package directions until tender. Let cool slightly.

Finely chop 0.5 piece onion, 2 cloves cloves garlic, 0.5 piece carrot, and 0.5 piece bell pepper.

In a large bowl, combine the cooked amaranth, chopped vegetables, 1 whole egg, 0.5 cup breadcrumbs, 0.5 tsp salt, and 0.25 tsp black pepper. Mix well until thoroughly combined.

Form the mixture into 6 pieces patties, about 0.5 inch inch thick.

Heat 2 tbsp olive oil in a large skillet over medium heat.

Cook the patties for 5 minutes per side, until golden brown and heated through.
