2 lbs chicken thighs
0.5 cup gochujang
0.25 cup soy sauce
0.25 cup honey
2 tbsp rice vinegar
1 tbsp sesame oil
4 cloves garlic
1 inch piece ginger
1 tbsp sesame seeds
2 stalks scallions
1 tbsp vegetable oil
0.5 tsp salt
0.25 tsp black pepper

Instructions

    Preheat oven to 400°F. Finely mince the garlic and grate the ginger.

    In a bowl, whisk together gochujang, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.

    Pat the chicken thighs dry and season with salt and pepper.

    Place chicken thighs in a baking dish. Pour half of the gochujang glaze over the chicken, ensuring each piece is coated. Reserve the remaining glaze.

    Bake for 25-30 minutes, or until chicken is cooked through and juices run clear.

    While chicken bakes, heat vegetable oil in a small saucepan over medium heat. Add the reserved glaze and simmer for 5 minutes until slightly thickened.
