1 can (12 oz) Spam
2 cups short-grain sushi rice
2 cups water
6 sheets nori sheets
0.25 cup soy sauce
0.25 cup sugar
1 tbsp vegetable oil

Instructions

    Cook the sushi rice according to package directions.

    While rice is cooking, prepare the glaze. In a small bowl, whisk together soy sauce and sugar until sugar is dissolved.

    Slice the Spam into 6 equal rectangular slices.

    Heat vegetable oil in a skillet over medium-high heat. Fry Spam slices for 2-3 minutes per side, until golden brown and slightly crispy.

    Brush the Spam slices with the soy sauce and sugar glaze. Cook for another 1-2 minutes per side, until the glaze is caramelized.

    Assemble the musubi. Cut each nori sheet in half crosswise.

    Place a nori half, shiny side down, on a clean surface. If using a musubi mold, place it on the nori. Otherwise, form the rice by hand.

    Press about 1/2 cup of cooked rice into the mold or form into a rectangular block.

    Place a glazed Spam slice on top of the rice.

    Fold the nori around the rice and Spam. Moisten the edge of the nori with a little water to seal.
