
Slow Cooker White Chicken Chili

Chop the onion and mince the garlic.

Heat olive oil in a skillet over medium-high heat. Add chopped onion and cook until softened, about 5-7 minutes.

Add the minced garlic to the skillet and cook for 1 minute more until fragrant.

Transfer the cooked onion and garlic to the slow cooker.

Add the chicken breasts, drained and rinsed cannellini beans, drained great northern beans, diced green chilies, chicken broth, cumin, oregano, salt, and black pepper to the slow cooker.

Cover and cook on low for 6-8 hours or on high for 3-4 hours.

About 30 minutes before serving, remove the chicken breasts from the slow cooker and shred them using two forks.
