1 lb ground turkey
1 small onion
0.5 medium green bell pepper
2 cloves garlic
1 cup long-grain white rice
2 cups chicken broth
1 tbsp soy sauce
1.5 tbsp Cajun seasoning
0.5 tsp salt
0.25 tsp black pepper
1 tbsp olive oil

Instructions

    Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned. Drain excess fat.

    Add chopped onion and bell pepper to the skillet. Cook until softened, about 3-4 minutes. Add minced garlic and cook for 30 seconds more.

    Stir in the uncooked rice, Cajun seasoning, salt, and pepper. Cook for 1 minute, stirring.
