
Mediterranean Chicken and Vegetable Skillet

Arrange dishes on a tray.

Cut chicken thighs into 1-inch pieces. Slice mushrooms, dice carrots and celery, cube potatoes, and mince onion and garlic.

Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.

Add onion, carrots, and celery to the skillet. Sauté for 5 minutes until vegetables begin to soften. Add garlic and cook for 1 minute more.

Add mushrooms and potatoes to the skillet. Cook for 7-10 minutes, stirring occasionally, until mushrooms are browned and potatoes are tender-crisp.

Return chicken to the skillet. Add diced tomatoes (undrained), oregano, thyme, salt, and pepper. Stir to combine.
