Instructions

  1. 1

In a large bowl, whisk together buttermilk and eggs. Add chicken tenderloins and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

  2. 2

In a separate shallow dish, combine all-purpose flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well.

  3. 3

Remove chicken from buttermilk mixture, letting excess drip off. Dredge each piece thoroughly in the flour mixture, pressing to coat. Let coated chicken rest on a wire rack for 10 minutes.

  4. 4

In a large, heavy-bottomed pot or Dutch oven, heat vegetable oil over medium-high heat until it reaches 350°F.

  5. 5

Carefully place coated chicken pieces into the hot oil, ensuring not to overcrowd the pot. Fry in batches for 6-8 minutes, turning occasionally, until golden brown and cooked through.

  6. 6

Remove fried chicken from oil and place on a clean wire rack set over a baking sheet to drain excess oil. Season immediately with a little extra salt if desired.

  7. 7

Serve hot with your favorite sides.
