1 ½ lbs chicken thighs
1 ½ lbs baby potatoes
1 large lemon
½ cup olive oil
2 tbsp dried oregano
4 cloves garlic
1 ½ tsp salt
¾ tsp black pepper
¼ cup fresh parsley

Instructions

    Preheat oven to 400°F.

    Wash and halve the baby potatoes. Mince the garlic. Zest and juice the lemon.

    In a large bowl, combine the chicken thighs, halved potatoes, minced garlic, olive oil, lemon zest, lemon juice, dried oregano, 1 tsp salt, and 0.5 tsp black pepper. Toss to coat everything evenly.

    Spread the chicken and potato mixture in a single layer on a large baking sheet.

    Roast for 35-45 minutes, or until the potatoes are tender and golden brown, and the chicken is cooked through and juices run clear.
