Scramble the eggs: Whisk eggs with a pinch of salt and white pepper. Heat 1 tsp vegetable oil in a wok or large skillet over medium-high heat. Pour in eggs and cook, stirring, until just set. Remove from wok and set aside.

Prepare the shrimp and pork: If using raw shrimp, quickly stir-fry them in the wok with a little oil until pink and cooked through. Remove and set aside. If using pre-cooked char siu, ensure it is diced.

Stir-fry vegetables: Add remaining 1.5 tbsp vegetable oil to the wok over medium-high heat. Add diced carrots and cook for 2-3 minutes until slightly tender. Add frozen peas and cook for another minute.

Add rice and seasonings: Add the cooked jasmine rice to the wok. Break up any clumps. Stir-fry for 2-3 minutes until heated through. Add soy sauce, sesame oil, remaining salt, and white pepper. Stir well to combine.

Combine ingredients: Return the cooked shrimp, diced char siu pork, and scrambled eggs to the wok. Add chopped scallions. Toss everything together gently for 1-2 minutes until well combined and heated through.
