2 tbsp olive oil
1 tsp salt
½ tsp black pepper
2 medium ripe peaches
1 jalapeño
¼ cup red onion
¼ cup fresh cilantro

    Prepare the salsa: Dice the peaches, finely mince the jalapeño (remove seeds for less heat), and finely chop the red onion and cilantro. Zest and juice the lime.
