Prepare the vegetables: Cut the corn kernels off the cob. If using frozen lima beans, thaw them. Halve the cherry tomatoes. Dice the red bell pepper and red onion. Finely mince the jalapeno (remove seeds for less heat). Chop the cilantro.

In a large bowl, combine the corn kernels, lima beans, cherry tomatoes, diced red bell pepper, and diced red onion.

Add the minced jalapeno, chopped cilantro, lime juice, and olive oil to the bowl.

Season with salt and black pepper. Toss gently to combine all ingredients evenly.
