2 lbs chicken breasts
2 tbsp olive oil
4 cloves garlic
0.5 cup sun-dried tomatoes
1 cup heavy cream
5 oz baby spinach
0.5 cup parmesan cheese
0.5 cup chicken broth
0.5 tsp salt
0.25 tsp black pepper

Instructions

    Prepare the chicken: slice chicken breasts into cutlets. Season with salt and black pepper.

    Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken cutlets and cook for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.

    Sauté aromatics: Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.

    Make the sauce: Pour in chicken broth and heavy cream. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.

    Wilt spinach and melt cheese: Stir in baby spinach and cook until wilted. Stir in grated parmesan cheese until melted and sauce thickens.
