Ingredients

4 whole chicken breast
2 tbsp olive oil
4 cloves garlic
0.5 cup sun-dried tomatoes
1 cup heavy cream
0.5 cup chicken broth
2 cups baby spinach
0.25 cup parmesan cheese
1 tsp salt
0.5 tsp black pepper

Pat the 4 whole chicken breasts dry and season with 1 tsp of salt and 0.5 tsp of black pepper.

Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 5 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.

Add minced 4 cloves garlic to the skillet and cook for 1 minute until fragrant.

Stir in the chopped 0.5 cup sun-dried tomatoes, 0.5 cup of chicken broth, and 1 cup of heavy cream. Bring to a simmer.

Return the chicken to the skillet. Add the 2 cups baby spinach and 0.25 cup of parmesan cheese. Cook until the spinach is wilted and the sauce has thickened, about 3 minutes .
