
Cheesy Baked Farro

Instructions

Rinse the farro under cold water.

Dice the onion.

Mince the garlic.

Dice the bell pepper.

In a large oven-safe pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and bell pepper and cook until softened, about 5-7 minutes.

Add the minced garlic and cook for 1 minute more until fragrant.

Stir in the rinsed farro, vegetable broth, diced tomatoes, salt, and black pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 20 minutes, or until most of the liquid is absorbed.

Remove the pot from heat. Stir in half of the cheddar cheese and half of the Monterey Jack cheese.
