Instructions
Preheat oven to 375 degrees Fahrenheit. Cook 1.5 cups farro in 3 cups vegetable broth according to package directions until tender. Drain and set aside.
In a large oven-safe skillet or Dutch oven, melt 3 tbsp butter over medium heat. Add the 1 piece chopped onion and cook until softened, about 5 minutes.

Add the 2 cloves minced garlic and cook for 1 minute more.
Whisk in the 3 tbsp all-purpose flour and cook for 1 minute, stirring constantly, to form a roux.
Gradually whisk in the 2 cups milk until smooth. Bring to a simmer and cook, stirring, until thickened, about 5 minutes.

Stir in the cooked farro, 1 cup peas, 1.5 cups shredded cheddar cheese, 1 tsp salt, and 0.5 tsp pepper.
Pour the mixture into a greased 8x8-inch baking dish if not using an oven-safe skillet. Bake for 20 minutes or until bubbly and golden brown on top.
