Slice the green tomatoes about 1/2 inch thick. In a shallow dish, combine flour, cornmeal, smoked paprika, cayenne pepper, salt, and black pepper.

In another shallow dish, whisk together the eggs and milk. Dredge each tomato slice first in the flour mixture, then dip into the egg mixture, and finally coat again in the flour mixture. Place on a plate.

Heat vegetable oil in a large skillet over medium-high heat. Fry the coated tomato slices in batches for about 3-4 minutes per side, until golden brown and crispy. Drain on paper towels.

Cook bacon in a separate skillet until crispy. Drain on paper towels. Butter one side of each slice of sourdough bread.

Toast the bread slices in a clean skillet over medium heat, buttered-side down, until golden brown. While the bread toasts, prepare the aioli by mixing mayonnaise, sriracha, and lime juice in a small bowl.

Assemble the sandwiches: spread aioli on the untoasted side of four bread slices. Top with lettuce, fried green tomatoes, bacon, and the remaining bread slices.
