½ head cabbage
4 slices bacon
1 medium onion
2 tbsp apple cider vinegar
1 tbsp brown sugar
½ cup water
½ tsp salt
¼ tsp black pepper

Instructions

    Chop the bacon into small pieces. Slice the onion thinly. Shred the cabbage.

    In a large pot or Dutch oven, cook the chopped bacon over medium heat until crisp. Remove bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

    Add the sliced onion to the pot and sauté in the bacon fat for 5-7 minutes until softened.

    Add the shredded cabbage to the pot. Stir in the apple cider vinegar, brown sugar, water, salt, and black pepper.

    Bring to a simmer, then cover, reduce heat to low, and braise for 30-40 minutes, or until cabbage is very tender. Stir occasionally.
