Finely chop the dark chocolate and place it in a heatproof bowl.

Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Do not boil.

Pour the hot cream over the chopped chocolate. Let it sit for 5 minutes without stirring.

Gently whisk the mixture until smooth and emulsified. Stir in the butter and vanilla extract until fully incorporated.

Cover the bowl and refrigerate for at least 2-3 hours, or until the ganache is firm enough to scoop.
