
Classic BBQ Turkey Meatball Bowls

Preheat oven to 400F. Finely mince the 0.25 piece of onion and 2 cloves of garlic.

In a large bowl, combine 1 lb ground turkey, 0.5 cup breadcrumbs, 1 egg, the minced onion, minced garlic, 0.5 tsp salt, and 0.25 tsp black pepper. Mix gently until just combined.

Roll the mixture into approximately 1-inch meatballs. Place the meatballs on a baking sheet lined with parchment paper.

Bake for 15-20 minutes, or until cooked through.

While meatballs bake, cook 2 cups rice according to package directions using 4 cups water.

In a skillet over medium-high heat, heat 1 tbsp olive oil. Add 2 cups broccoli florets and 0.5 piece red bell pepper, sliced into 0.5 inch strips. Sauté for 5-7 minutes until tender-crisp.

Once meatballs are cooked, add 1 cup BBQ sauce to the baking sheet with the meatballs and toss to coat.
