1 ½ lbs chicken thighs
1 cup orzo pasta
3 cup chicken broth
1 lemon
4 cloves garlic
2 tbsp olive oil
1 tsp dried oregano
¼ cup fresh dill
1 tsp salt
½ tsp black pepper

    Pat chicken thighs dry and season generously with salt and black pepper.

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear chicken thighs for 3-4 minutes per side until golden brown. Remove chicken and set aside.

    Add minced garlic to the pot and sauté for 1 minute until fragrant.

    Stir in the orzo pasta and dried oregano. Toast for 1 minute, stirring constantly.

    Pour in chicken broth and the juice of half a lemon. Bring to a simmer.

    Return chicken thighs to the pot, nestling them into the orzo. Cover and simmer for 15-20 minutes, or until orzo is cooked through and chicken is cooked to 165°F.
