Pat chicken thighs dry and season generously with salt and black pepper.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear chicken thighs for 3-4 minutes per side until golden brown. Remove chicken and set aside.

Add minced garlic to the pot and sauté for 1 minute until fragrant.

Stir in the orzo pasta and dried oregano. Toast for 1 minute, stirring constantly.

Pour in chicken broth and the juice of half a lemon. Bring to a simmer.
