2 15-ounce cans canned salmon
0.5 cup panko breadcrumbs
1 large egg
2 tbsp unsalted butter
1 tbsp white miso paste
2 stalks scallions
1 tsp lemon juice
0.25 tsp black pepper
2 tbsp vegetable oil

    Drain and flake the canned salmon into a medium bowl. Discard any bones or skin.

    Melt the butter in a small pan over medium heat. Whisk in the white miso paste until smooth. Remove from heat and let cool slightly.

    Add the panko breadcrumbs, egg, miso butter mixture, chopped scallions, lemon juice, and black pepper to the bowl with the salmon. Mix gently until just combined. Do not overmix.
