1.5 lbs ground chicken
0.25 cup fresh parsley
2 tbsp fresh dill
1 tbsp lemon zest
2 cloves garlic
1 large egg
0.5 cup breadcrumbs
2 tbsp olive oil
1 tsp salt
0.5 tsp black pepper

    Finely chop the fresh parsley and dill. Mince the garlic cloves.

    In a large bowl, combine the ground chicken, chopped parsley, chopped dill, lemon zest, minced garlic, egg, breadcrumbs, 1 tbsp of olive oil, salt, and black pepper.

    Roll the mixture into approximately 1.5-inch meatballs. You should have about 20-24 meatballs.
