12 oz spaghetti or linguine
½ cup creamy peanut butter
3 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp sriracha or chili garlic sauce
1 tbsp honey or maple syrup
2 clove garlic
1 inch ginger
½ cup hot water
1 large cucumber
3 scallions
¼ cup cilantro
¼ cup crushed peanuts

Instructions

    Cook the spaghetti or linguine according to package directions. Reserve about 1 cup of the pasta water before draining.

    While the pasta cooks, prepare the sauce. In a large bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, sriracha, honey, minced garlic, and grated ginger until smooth. Gradually whisk in the hot water until the sauce reaches a smooth, pourable consistency. Add more hot water, 1 tablespoon at a time, if needed.

    Cut the cucumber in half lengthwise, scoop out the seeds, and thinly slice. Thinly slice the scallions and chop the cilantro.

    Add the drained pasta to the bowl with the peanut sauce. Toss to coat evenly, adding a splash of the reserved pasta water if the sauce is too thick. Stir in half of the sliced cucumber, scallions, and cilantro.

    Serve the noodles immediately, topped with the remaining cucumber, scallions, cilantro, and crushed peanuts.
